Anyone have other quick delicious eggplant ideas?

Made these with your substitutions. Very good but you have to love oatmeal (and I do)!

Zucchini enchiladas and salad

You can also buy salt and vinegar popcorn salt! :)

Green chai tea, if you like cinnamon!

I dip apple slices in chocolate or caramel pudding. Yum!

Those look good!

You can either make a mini omelet out of one egg or poach one.

I used to buy the ready to bake frozen bread loaves, thaw them and use those. Not sure how many calories, but if you are willing to work for them... Now I use pizza yeast and make my dough in minutes as it doesn't need to rise. I too am willing to burn in order to eat. So worth it if you use lots of veg toppings!!!

Thanks!!!

Do any regular grocery stores carry these noodles? In which section do I find them?
-
When I made them I used regular flour and just made one big one. Even if you fill with a bit of chicken and a lot of veg it is still lo cal even if it is a 100 calorie tortilla. I also like the idea of making it a pizza. Real crust flavour, lots of veggies, and a bit of cheese still leaves room for fruit dessert or snacks…
