  • Make tofu fajitas or tofu tacos. I used to do that a lot. For fajitas just cut tofu into long strips and for tacos, mash the tofu up until it's the consistency of minced beef.

  • Canned tomatoes are processed and have a whopping amount of potassium. Maybe make a stew/soup heavy on the tomatoes once in a while? Pizza would probably be a really good source of potassium.
