I thought I was logging everything, then realized I wasn't logging the splashes of milk in the coffee or the oil used for a stir-fry. I've decided that if I undereat my goal by, say, 200 calories, that may make up for the odd bits left out.

A few suggestions: since he won't permit you to add to what he likes, how would this work? When you cook pasta, also cook something like zucchini slices. Serve it separately.
