I'm not strictly vegan ongoing, but it's something I like to try for--it's all health reasons for me, not religious or because of activism. I have liked it, I tried to stay away from too many soy meat substitutes and just eat whole foods. I was surprised how easy it was when eating at home. With a vegetarian diet at home I…

I love it in veggie curry, take an onion, a pepper or two, some quartered mushrooms, a grated carrot, a little fresh ginger and garlic, saute it up, then add 3 T jarred red curry paste, 2 T brown sugar, 1 T fish sauce and a can of coconut milk (I prefer the lowfat) and heat it up. Delicious!

If you use a tablespoon or two at a time you can bloat but I just use them in my oatmeal and shakes, prob 1-2 tsp at a time. I feel like after exercise it helps me retain water/hydrate until lunchtime. I like them a lot.

I'm so happy to see another red lentil soup with no curry; it looks delicious! Here's the other that I found, and they gave a cute option--layer the ingredients in order in a jar and gift for Christmas: Lentil Christmas Soup in a Jar • 2 tablespoons vegetable bouillon granules • 1/3 cup uncooked rice • 1/3 cup red lentils…

I've been Pescatarian about 3 years. However, I mainly eat fish when I am out or traveling; at home I eat mainly vegetarian, and I find that as I eat healthy real food--that's not just constant soy 'meat replacement', a lot of that food tends to be vegan. There are plenty of bean and rice recipes, chili recipes, soup…

My two favorite lentil recipes: 1. http://www.food.com/recipe/lentil-soup-for-people-who-thought-they-hated-lentils-meat-op-99564 2. LENTIL RICE SALAD --Cook 1/2 bag lentils with 2 C veggie broth. Cook 1 C brown rice with 2 1/2 C water. Let cool and combine. --Slightly cook or grill crunchy veggies of your choice: red…

On the boat I like Michelob Ultra beer with Lime (98 cals ea) and the Mike's Hard Light Lemonade (also 98 cals ea)...just discovered it, and it's great iced on a hot day.

When I went "pescatarian" I looked around for vegetarian and vegan recipes alike. Although there are tons of chili recipes out there, this is the best one I found through trial and error, and it happens to be vegan as well. Tex Mex Chili 1-2 T olive oil 1 Med onion, chopped 1 ea Red and Yellow Pepper, chopped 1 Jalepeno,…

I've been Pescatarian for 3 years with family who is Omni, and that is exactly what I do--separate out the meat. Tonight we'll have chicken enchiladas, but I'll make my enchiladas with black beans. We make spaghetti with meat on the side, add your own. If they have burgers, I have a veggie burger. Etc. It's really not that…

I think they stress that to make sure you are getting your calories from foods that are going to help keep you full and build/re-build muscle after exercise. I don't know if you should be concerned but depending on how that's affecting your calorie count maybe stretch some of those protein-rich foods out over the day to…
