  • I like to cook dried beans and then freeze them in 1-2 Cup batches. I will also make mexican rice in my rice cooker and freeze that in quart baggies. Lastly I make veggie burgers and then freeze them for a quick microwave lunch or dinner when I need them!

  • I like the idea of cooking the squash in the microwave so that the strands are firmer, I'm going to try that. Once you've scraped out the 'spaghetti' combine with well-drained rotel tomatoes, kidney beans, and cheese, bake in the over 15 minutes. Very good!

  • So good! We make this with purple cabbage and also add toasted pecans. For regular green cabbage I'd say use it on fish or shrimp tacos, in pot stickers or lo mien or stir fry, or make a veggie-barley soup. These are the ways I get my family to eat cabbage! Lol
  • I had a yummy lunch today....baked spaghetti squash (cut side down, sprayed with Pam) for 30 mins, combined one half-removed "spaghetti" with: 2 oz whole wheat spaghetti (cooked), a little butter/olive oil, Parmesan cheese, and fresh basil. Very simple, but very good!

  • I've been Pescatarian for 6 years now and do enjoy the way I eat. I do eat Vegetarian meals a lot, but I live on the coast and still enjoy fresh wild-caught fish and shellfish as well. I have found that it is fairly easy to eat out, eating this way, although some call me a vegetarian. Good luck to you in the new year.
