I second the baking method! Gets them nice and crispy and no chewy fat - blech. When I make them here at work I have no choice but to use a cookie sheet, so I line it in tinfoil and drain the fat off halfway through cooking. I have tried turkey bacon a few times, but can't get over the texture.

This just reminds me when I went in for diabetic counseling and the lady told me "I told another guy that yes, of course fruits and vegetables are still important to eat! Then I found out he was eating 8 ears of corn a day. So yes you can have it, but moderation, they have nutritional values just like everything else!"

I work in a group home.. Sitting at a desk, buzzing people in. I feel your pain! Can't eat what you don't bring ;) I also tote to work 2-3 bottles of carbonated flavored water and/or crystal light and see how long I can drink them before I feel the need to eat.
