It's delicious, and I enjoy it with spag sauce, but i agree, it tastes nothing like real pasta. I don't find it tastes like squash either, it's quite a unique taste. I actually dried some seeds last year and I was thinking about trying to grow it.

Have you been tracking calories? Maybe your portions are still too large. If you decide to follow your Drs suggestion with GI, investigate glycemic load (GL) as well. GI is pretty much pointless on its own. GL considers quantity.

Even short studies often involve self reported intake, food diaries or food frequency questionnaires. They're not particularly reliable, but neither are food recalls with trained interviewers. People tend to underreport. Hopefully the variation within each individual's diary is not too large.

I use butter in cooking but I buy a plant sterol based spread for dh because he has inherited a high cholesterol problem.

It's similar in my country. They receive very basic 'high school level' nutrition education and unfortunately, are known to put people on fad diets which can set them up for failure.

They're not magical either. OP it really is about eating less calories than you burn. Start tracking what you're currently eating and see where you can make some changes.
