I have very little experience with swimming like this, but since it's something you do regularly, maybe you could alternate between logging it as vigorous and light/moderate? One day light, the next time vigorous, etc. That way you have a safe and reasonable estimate for the week.

This. I have the same issue! I'm at 1390 and on days that I don't exercise I stress out about it and worry that I'll be hungry all day. But it never happens!

I recently started running myself after always saying that I DO NOT run. Now I love it! I'm up to running at 5.5 mph for 30 minutes, which is about 3 miles. I'm slightly taller than the OP and I'm at 165 right now. I've always worn medium or large, sometimes even small if the cut is generous. Of course it really depends on frame size, etc, but my guess is that 180-200 would be an XL.

I like to make plain mashed potatoes (with the skin) and mix it with oven baked butternut squash. Of course it's a different color but it is delicious! The squash makes it creamy and you don't need nearly as much milk/butter or salt.
