When it comes to building muscle carbs don't matter. It's all about hitting your fat and protein minimums to get the most benefit out of your diet. I have days where I'll eat 100g carbs and others where I eat 250g. That said, they are great for the energy levels :)

I don't eat breakfast so I have more to eat later in the day, I prefer it that way. No need for breakfast from a diet point of view. You can meet your calories in one meal if you like it that way :)

Well, you can't get ripped if you don't have the muscle to show it. I think you would be lean enough to start bulking straight away. Hit 3000 cals a day and hit the gym hard doing something like Starting Strength. Google it! You only need protein if you aren't getting enough through diet. I take protein and creatine.

Unfortunately you can't do both. If you are already lean you need to eat in a calorie surplus to build muscle. 10-20% over your TDEE is a good start. Yes, I like to look at everything over a weekly period rather than daily. At least then if a bad day was to appear you can always try and make it up.

Yes, only a calorie deficit will make you lose weight although cardio will burn more calories than weights will.
