It's not really accurate to say that veggies have lots of carbs. Veggies like spinach, other greens, zucchini etc have pretty low amounts of carbs.

I'm currently at around 1500 calories a day, and lose about a pound a week on average. I have about 5 meals a day which are a combination of protein, fat and carbs.
