Oh yeah stash if I was unclear about the main question you asked, it should be fine to go somewhat over on calories as long as you are maintaining LCHF macros. For a while, anyway.

Beef jerky, pretty much any breakfast meat, pretty much any prepared soup, most frozen meals. Sodium is almost too easy to find, at least for me.
