You end your day well under your calorie goal. Use some of those leftover calories to add in some more protein...eggs, cottage chz, Greek yogurt, tuna, meat.

We use soba noodles, the kids enjoy them and they cook super quick. If we eat ramen we toss the seasoning packet and I add nooch, salt,pepper,squeeze of lime, peas, grn onion, corn and sometimes egg...kids love it.

A box of bran muffin mix Or spice cake mix and add a 15oz can of pumpkin puree, nothing else...maybe some chocolate chips. I make mini muffins this way.

I was thinking dates too, stuffed with goat cheese and a pecan, drizzled with honey and topped with flake salt. Stuffed mushrooms with cream chz, parm, bacon and green onion...they travel well and you can throw them in with whatever is cooking in the oven. What diklibert said. Also a go to for me is cliantro lime marinade/sauce. It is cilantro 1/2c, juice of 2 limes, garlic 3 clv, water 1/4c, and evoo 1/4c. It also calls for 1/2c fresh oregano...i usually leave this out. Combine in blender. I make it creamy by leaving out oil and 1/2water and adding avocado.

Vinegar. Rice vinegar, Baslamic, red wine...If it's too strong you can water it down. I usually skip the oil and use the calories for cheese or avocado, nuts and seeds instead.

I eat all the foods, in moderation. But if you are looking to add more fruits and vegetables, there are a lot of grab and go options at the store. Pre cut and washed, bags of salad mix, cut fruit, whole fruit.
