If it is a bagged salad it will include a portion of all the contents. If it is a menu item it usually does NOT include the extras (dressing, croutons, etc.) so it always best to ask.

I have found large discrepancies, especially with chunky foods like blackberries, miniwheats, grape tomatoes, walnuts, olives, etc. They are also allowed to round the calories down, so I always round them back up. So I will weigh my cereal, then round up to the nearest 5.

I make a small portion and eat it. You could do an iced pumpkin latte with real ingredients, that way minimal sugary syrup, and you could control the type and strength of the coffee.

1/8 cup is 2 Tbsp. Maple syrup is about 52/Tbsp (depends somewhat on grade), so your estimate (if that is pancakes included) seems about right.

Just add nutrient and calorie rich foods. If you like wine, beer, cake, cookies, etc. have some as part of your meal plan, but try to add nutrient density to go with the calories. If you start eating more your body will start wanting more. Same with exercise. The more you do the more your body wants to do.
