How are you only burning 350 calories an hour at >30 kph? For the average person that's moving at 8 km/h. Even a brisk walk at 5.5 kph would burn more. Unless you meant to say your total ride is only 30 kilometers? What method are you using to measure your calories?

1% chocolate milk after each long run. Puts a nice dent in the calorie deficit. I drink about a quart or so after a 2-3 hour bike ride. 700 calories, nice shot of carbs and protein with some fat. Casein, whey. Relatively cheap and pretty accessible at a convenience store/gas station.

It's because they are so energy dense. Pure carbs. Good idea for 1 hour+ cardio days, not a good idea for sedentary days. 3 bananas = 300 calories (about 2-3 hours of cardio). If you struggle with keeping a calorie deficit, bananas would be a bad idea. They're not good for satiety, either.

No experience with it. Was it the derailleur hanger or the actual dropout itself? Hangers unbolt and can be replaced. Older bikes don't use hangers (derailleur is bolted to the frame). Google indicates it's certainly not unheard of (RD breaking dropout) Might be time for a new frame to match the power of those beastly legs.
