  • Take either a 100% whole wheat or 100 calorie english muffin and slice in half. Mix together 1/4 cup crushed pineapple (drained) and 1/4 fat free ricotta cheese and spread evenly on each half of muffin. Sprinkle with cinnamon to taste. Place under broiler for about 5 - 10 minutes until warm.
