  • SOUP is the answer for the veggies. Absolutely try lots of soups and fit some vegs in that way. For fruit -- I love cooked apples and pears, try that, they are yummy with a shake of cinnamon and nutmeg on top.
  • Protein always with bread. So -- peanut butter on the toast -- or cottage cheese -- or Greek yogurt -- a cheese stick -- melt some cheese on the toast -- or one scrambled egg with cheese melted on top -- my personal fave breakfast is poached egg on a bialy with a slice of Swiss cheese on top.
  • Soup with lots of veggies (hence lots of fiber) -- there are plenty you can buy that are 100 calories per serving or less -- or you can make them at home on the weekend and have them during the week, even better because you can control what's in them. Just be CAREFUL of the sodium content in canned soup. Some are very high.
