Well you went 3 miles in an hour, so enter it under "walking 3.0" for 60 minutes - even though you were running for part of it, there isn't an option for running 3.0. A HRM would give you more accurate calorie burn but if you don't have one then just do this. Good job running!

Are you getting enough protein? I don't usually so I've made a huge effort to choose items high in protein -- tuna, chicken, greek yogurt, cottage cheese, chickpeas. Yes sugar matters... even sugar from fruit. I'm not suggesting that you don't eat fruit but you should stay to 2-3 servings a day. And try and stay away from refined sugar altogether!!

Just pick one scale and always use that one. Weight fluctuates daily - hourly, and no two scales are exactly the same. In fact you could move your scale into a different spot and it will give you a different number!! So, same scale, same time of day and this will give you some consistency. Otherwise you will go crazy!!

It takes 3,500 calories beyond your regular burn to gain/lose 1 pound of fat, so at most you gained 1 lb of fat... HOWEVER all of the sodium in that food may cause you to retain water, so the scale may go up. Get back to your regular eating and drink lots of water... I find that cardio helps too.

Yep, only use the scale on hard surfaces. I put my scale in the same spot every time to be consistent.

Yes, please try to start eating more. You may be losing weight but it is not healthy. I understand it is difficult if you're not hungry but like others mentioned try and add some more food to your meal (slowly) and also adding snacks. Nuts, seeds, peanut butter, dried fruit, cheese. You have to want to change. It's not about dieting (as others have mentioned). It's about making smarter decisions. Does the 1,600 calories include your exercise calories? If it does then you're not eating enough training for a tri 1 - 2 hours / day. Your net calories would be close to zero!

This is not a healthy way of thinking. You NEED to eat, so you're not doing anything wrong. Think of food as fuel for your body. If you want your body to function for you, you need to give it fuel.

Taking measurements helps - waist, chest, hips, thighs, arms. It's difficult to notice on your body but when you measure yourself you will see the difference. And yes, taking pictures helps too.
