Leave the head of cauliflower whole, just cut out the core. Wrap cauliflower in plastic wrap, poke a few holes in wrap, stick head in microwave for 10 to 15 minutes until done. BigTireFlippe....I have the same concerns and issues with sodium so I cook my own chickpeas from dried beans. 15 oz can = 1.5 cups cooked dried beans. As for the tomato sauce, I look for cans with no salt added.
