Overnight oats with cottage cheese and banana. Miso-simmered mackerel, homemade pita chips, avocado buttermilk dip from Skinnytaste, and a fresh salad (which was nice but nothing to write home about). And ice cream, since I did spend almost two hours at the gym today.

I am a massive fan of erythritol. It's a natural sweetener with about 70% of the sweetness of sugar, and only 1 calorie per teaspoon. It doesn't have the weird aftertaste that stevia does either. Chilli bean burrito with havarti cheese and homemade salsa, un-pictured. I was planning on getting a much nicer photo of the burrito with the salsa poured over it, but in my haste to eat it I forgot. So here's a photo of the extra one. (Came out under 450 cals total).

Just baked a bunch of tortilla chips. The wraps I had were too much to fit into my calorie count at lunch time, so I figured this way I could have less of them. Barely used any oil and were done in 5 minutes.

Going away for a few days so a 'kitchen-sink' lunch for me today. Doesn't look like much but it was so good and quite filling for <300 cals. Zucchini, mushroom and egg scramble with homemade blueberry ketchup, topped with an avocado-cottage cheese dip and sauerkraut.

Sneaking dinner into a movie theatre tonight. Roasted cauliflower, oil-popped popcorn, baked tofu and a blueberry dipping sauce. Mine's portioned out separately since I'm terrible at portion-control while watching a movie.

Have you tried overnight oats? You soak them in a liquid overnight, so that they do go softer but retain more of their chewiness.

Sugar-free banana buckwheat pancakes topped with Fix & Fogg's peanut butter! (Not my favourite nut butter, personally, but it doesn't have any added vegetable oils and it's in my pantry so I need to eat it before I buy a different brand.)

Here's something that people from the USA would likely freak out about, but is perfectly safe: For extra protein, replace part of or all of your liquid for a raw egg. You won't even be able to tell the difference, and it's way cheaper than protein powder.

Rice or corn crackers with any kind of spread or dip? A high protein/fibre cereal can work well too. Also a really high quality dark chocolate I find satisfies me without leaving me craving.
