Not my best pic, but: back from vacation, back to real cooking. Dinner: grilled artichoke, apple sage (vegetarian) sausage, and a fantastic shredded zucchini & green pea cheater risotto.

On a long weekend trip for pal's birthday at rural rental house, we all realize we forgot about a cake. MacGuyvered this fig upside down cake using some fresh figs I'd bought roadside on the way up and some baking goods that were in the cabin, including a fortuitous can of dulce de leche. Will need to do a lot of hiking to…

Those chives and egg yolk look beautiful on that beef tartare, @crazyravr! Will have to try a vegetarian version...beets maybe? Thanks for sharing!

Neither had I, @swift13b! But I'm on an unofficial mission to reclaim fruits for savory applications, and savory bits for sweet application. Am happy to report that raspberry pairs (perhaps surprisingly?) well with garlic and onion, especially with a bit of heat. Next time, I might plan ahead and use some fresh jalapeno or…

Flatbread pizza night with the fiancé and Orange is the New Black, no leftovers. All made on garlic naan, toppings are: Roasted salsa verde, peppers, onions, cumin spiced soy crumbles, Monterey Jack cheese Burst cherry tomatoes, basil, mozzarella Coconut tofu curry (leftover), spinach, emmentaler cheese Light cream cheese,…

You can easily cook a frittata on the stovetop (or grill!) instead of baking it in the oven--if you like that kind of dish, it sounds like a great option. I'm a vegetarian and made one just the other day. I used a combination of cherry tomatoes, fresh rosemary, garlic, lots of green onion, and some soy crumbles, poured…

You need to clarify with your "Kosher" housemate what exactly this means to him/her. It *can* mean something quite restrictive ("true" Kosher requirements can be cumbersome even for lifelong Orthodox, observant Jews long-practiced in Kosher cooking). On the other hand, I had a college pal who said she "kept kosher" but…

Any time you're in the Bay Area, @FreshStartForMyself :) Dinner: big Israeli chopped salad of tomatoes, cucumber onion, parsley, lemon juice and olive oil, some BBQ tempeh, nectarine Lunch: last of the cornmeal waffles over mixed greens with spiced black beans, tomatoes and onion, and some roasted salsa verde + apricot
-
Leftover rosemary + tomato + soy crumble frittata with a few more garlic & rosemary roasted cherry tomatoes
-
Shaved zucchini and apricot salad with black beans and flat leaf parsley (from our patio garden), tossed in lemon juice & cracked pepper vinaigrette, a bit of Parmesan cheese. With some homemade roasted garlic baba ghanoush & ciabatta roll.
-
Overnight pressed sandwich: ciabatta roll, creamy tomato-basil-garlic hummus, salad greens, grilled zucchini and grilled eggplant, thin sliced pan fried tofu, with an apricot. Perfect for another hot afternoon, wish I had made a few more last night
-
Too hot to cook! Open cream cheese + apricot preserves + chili flakes sandwich, homemade roasted garlic & chives hummus, nectarine, boiled egg, raw veggies
-
Homemade vegetarian brown sugar baked beans over savory cornbread sriracha waffles with veggies The Big Salad: homemade "cool ranch" roasted chickpeas, leftover waffle croutons, cucumber, carrot, radish, mixed greens, avocado, boiled egg
-
Pearled barley with lemon zest, radish top pesto, raisins, and green peas Fuzzy dinner pic, but I assure you that this pimento cheese grilled sandwich on whole wheat bread was delicious; with grilled onion, grilled radish and zucchini, salad greens, and sweet onion dressing
-
Dinner: Grilled nectarine, zucchini, green bean salad with lemon vinaigrette and a curry veggie burger Lunch: Black bean + spinach nachos with nutritional yeast-spiked salsa "queso"
Malbec? How was it? Looks amazing!
It was :) can report, @Kruggeri that our beloved Malbec pairs fantastically with spicy chocolate! @mathandcats The recipe was approximately the following--I'd go heavier on the spices next time, though: 1. Preheat oven to 350 F. In a food processor, mix the following…

Extra dark chocolate cinnamon-cardamom-cayenne cake. And wine :)
-
Thanks, @Kruggeri! Going from a meat-and-potatoes family tradition to a veggie-heavy vegetarian diet has been a journey of many years, and I think it's broadened my tastes a lot. That said, I'm sure Malbec is great with steaks ;) trying it with a chocolate-cinnamon-cayenne cake this weekend, will report back! Lunch: open…

Pan fried tofu with herbed whipped ricotta over red pepper-tomato sauce with spinach & big glass of Malbec Mango & poblano "pizza" with honey barbecue sauce, leftover tofu, green onion, shredded mozzarella Big but simple cheese plate dinner on the patio: whole grain seeded bread, cucumber, butter + chipotle jam, some light…

In addition to great advice above, especially from @draznyth, do also be sure that you're drinking enough fluids as we really can often misinterpret or misdirect thirst and hunger. An extra glass of water or cup of tea before (or along with) a good snack might help you manage your "always hungry" feeling.

Dinner for 500 cal: salad of smoked paprika roasted chickpeas, parsley + spinach, red onion, cucumber with homemade chipotle-strawberry dressing, with a boiled egg and nectarine Lunch for 450 cal: spicy brown mustard potato-green pea salad, nectarine, cucumber, and a bit of smoked Gouda
-
Beautiful colors in that meal, @colejkeene :) Lunch: leftover enchiladas suizas over wilted spinach, about 300 cal. And since my fiancé will not eat leftovers other than pizza, many more of these in the freezer just for me.
-
Pan fried basil polenta wedges (leftover from dinner) over radish leaf pesto, roasted radishes, smoked paprika roasted chickpeas, a few dabs of cream cheese. Must use up random leftovers and veggies before weekend trip!
-
Not an every day food, but a wickedly perfect treat. Once made a batch of birthday dark chocolate brownies for a friend topped with swirled Nutella and pumpkin butter instead of frosting. It was, quite simply, the best thing ever.
-
That chunky tomato-olive sauce looks delightful, @colejkeene ! Homemade "beef" seitan stir fry with rice, green beans, bell pepper, garlic, cilantro and fresh lime Pizza lunch: lemon-artichoke pesto, white beans, sautéed spinach and garlic, a bit of fontina cheese, fruit
-
Making seitan at home is pretty easy and much cheaper than buying processed "wheat meats," plus you can build in any flavor you'd like. Using a batch for burritos, fajitas, a stir fry, or tossing with veggies sauce and pasta can make for a great, protein-rich meal. For protein-centric meals, I use a lot of beans and am a…

Bump. Dinner on the patio: Apple-sage vegetarian sausage, steamed green beans and pipe rigati tossed in a sage-parsley-wine-butter sauce. Late lunch: bbq tempeh on cucumber-strawberry-spinach salad with homemade chipotle-strawberry vinaigrette and a bit of dry jack cheese, boiled egg and some wafer thin crackers.

Guess so :) best of luck though, @Ryanstwin ! And stay swole, y'all ;) (ending notifications for thread)
