Okay thanks for the correction. I suppose it should be more like "too much simple sugar from processed food = bad"? I guess it's pretty clear to me/us that our bodies need carbs/sugar (just as they need fat) to run, but "the right kind" which can end up being a bit confusing when trying to explain it.

As an alternative to rice crackers, crisp bread is great. Especially if you can keep stuff like soft cheese, cottage cheese (or ham etc if you eat meat) in the mini fridge. Freezing and defrosting tofu and then squeezing out the water completely changes the texture and makes it so much more awesome! I usually cook bigger batches when I'm making stews, soups, curries, dhal, chilis, etc + sides (mostly rice), and even pasta, and freeze them in plastic tubs. The great thing is that it doesn't require any extra work to prepare lunch for the next day if you're already cooking anyway, otherwise I'd probably just forget…
