If you like fish take some tilapia and rub it with taco seasoning and grill it. Serve it with tortillas and a coleslaw with a vinegar dressing. Grilled pineapple makes a great side.

I have some similar issues when I host a family dinner. My go to meal is a roasted pork loin, grilled veggie kabobs, and French bread for those who aren't doing Atkins. Desert is usually baked apples with cinnamon and then drizzled with a little honey and some yogurt.

I do this too, but instead of mixed greens I will buy a bag of broccoli salad mix. I find that the crunchiness of the broccoli helps to satisfy me in a way that salad greens do not.

I like to make a spicy orange sauce (similar to what you get on takeaway Chinese food). It is a few tablespoons of hoisin sauce, 1/2 cup orange juice, and red pepper flakes. Then you let it thicken over low heat until it is as thick or thin as you want it. I love it over stir fried chicken, bell peppers, onions and carrots.

I eat soup almost everyday now that it is winter. It fills me up and I can incorporate a lot of veggies in with not a lot of effort. Roasted chickpeas are great. They are cheap, easy and really filling. There are lots of recipes for them with all kinds of seasonings.

Anything with roasted chickpeas is a great substitute for me. You can replace meat in a lot of dishes with then and if you roast until crispy they make a great snack.

Saute chopped red peppers and onion in a little olive oil. After a few minutes add in your corn and some salt and pepper. Continue cooking until corn is heated all the way through. (This may take longer for frozen corn than canned). This makes a great side for just about anything grilled or roasted.
