I make a lot of homemade (low sugar) apple butter in the fall and then I like to stir it into my oatmeal. Since there are spices and a little sugar in the apple butter I do not add anything else to it.

I like to do beef stew for the crock pot. I chop up a tougher cut of beef into cubes along with carrots, onions, potatoes, celery and whatever other really firm vegetables look good. I usually try to make sure that 2/3 of the vegetables are not potatoes. I dump it all in a gallon baggie and lay it flat in my freezer. When…

I like shrimp tacos. I usually just cook a handful of shrimp in a nonstick pan and with a little chili powder and then toss them into a corn tortilla with some chopped cabbage and some lime juice and a touch of salsa. Quick, easy, and really filling.

My favorites all use leftovers from the night before. I like to cook chicken in salsa in the crockpot and then shred it. It is really good in a wrap with some lettuce, shredded cheese, salsa and sour cream. It is really filling and keeps me going all afternoon.
