  • If you need to do several at a time, poke the potatoes with a fork a few times and then wrap in foil. Stick the wrapped potatoes in a crock pot on low and let cook all day.

  • I like to rub a firm white fish with a little taco type seasoning and grill it. Them I serve it with tortillas and a vinegar based coleslaw. For a side I like to have an orange. It is filling and light.
  • I like to make spinach salads with toasted almonds and orange/grapefruit wedges. All I use to dress it is a little balsamic vinegar.
  • I eat a lot of soup. You can go with canned soup, but I like to make my own so I can control the sodium better. One of my favorites is to make beef and barley soup. It is extremely filling and you can add whatever vegetables that you like.

  • I do a lot of taco bowls with brown rice, it has a lot of flavor and I eat less of it than white rice. I cook chicken, taco seasoning, salsa, corn, and black beans in my crock pot and shred the chicken when it is done. A big spoonful on top of some rice with any extra veggies you want and you have a great meal.
  • Fruit kabobs are always a nice one. They make eating fruit as an appetizer easy and look really nice. Sometimes I will also make a yogurt dipping sauce to go with them.
