Strength training is definitely the way to go. Also, it's not so much the calorie count as what your food is made of -- lean meat and veggies are going to help you build definition more than the equivalent amount of calories in cereal, snack bars, etc (for example). Try to build your diet around lean meats and a lot of veggies, nuts, some fruit, little starch, and as little (or no!) sugar as possible.
