It's really likely you just aren't fueling your body properly for these sessions. What do you normally eat before and after workouts?

If you're under your calorie goal, unless you are working to build muscle, you will be losing muscle as well as fat. So yes, the more of a deficit you have, the more muscle tissue you lose. This is why exercising beyond just cardio is important for losing weight in a healthy manor.

I think everyone is different. I too was on a super low carb diet, only eating whole foods for months, over time I would give myself a "cheat" day and I would just binge on sweets and other carbs.
