Beyond is good! I also like these ones by the brand "Light Life" that I find sometimes at Walmart! They cook up really well. When in doubt, I gravitate to anything with a black bean base though! Most grocery stores I have been to have some version of those. :)

They're a little pricey, but I love Vega bars (their sea salt dark chocolate ones are sooooo good). 100% vegan (and I believe GF!)

1 cup of grilled or roasted veggies, 1/2 cup brown rice, 2 hard boiled eggs OR a serving of tofu. :) +/- 2 TBS of dressing. Sometimes I also up the protein if I know my other meals will be lower (ie more of the listed protein, or adding beans etc).
