Physics professor. I gave my students a lab on work, energy, and power this week. They had to do pushups and run up and down the stairs and figure out how much energy they were expending. The Athletics Training majors were really into it. It was a riot. :)

The above works really well, but add 1/4 tsp cream of tartar. It helps with the consistency; keeps the eggs and coconut flour bound together. You can also substitute flax meal for coconut flour, but do it in a 2:1 ratio -- so in the above recipe it would be 4 Tbsp flax.
