I tried making a zucchini and mushroom risotto, but I apparently don't know how to cook risotto, so the rice was rather….crunchy. Whoops! But if you know how to cook risotto, then it's a pretty good combination. :)

Okay, I was super curious about this, so I did a little number crunching using the food database here, and I got numbers that were between 43 and 49 calories. So just a liiiiittle bit off, but damn those are still some really low numbers! :) @SherryTeach That's too bad! I was just thinking that I was going to try this…

Haha, like, between 1 and 2 am. I know I should go to bed and get up earlier, but I work in the afternoons and normally don't get home until 10 o'clock.
