Hi all, I am doing the program, too. I am in Phase 1, doing workouts 3 and 4 for the next couple of weeks. I am enjoying the convenience of the workouts. I usually run, but it's Winter here, and the shorter, colder days make it harder for me to get out for a run.

Your 2lb loss on your inactive week may have been due to your blood volume decreasing with inactivity. The weight returned when you started running again as your blood volume increased again. It's a physiological thing the body does in response to exercise.

Just include foods you like, then. Your diet will be more sustainable that way. I was a really picky eater as a child; the only vegetable I would eat was potato (mashed or as chips).
