It's absolutely normal to retain water from hormonal changes. Be kind to your body and try not to sweat the small stuff. Stress is much worse than a little extra water weight ;)

As long as it's a good quality fat or oil, eat it. And eat a good deal of it. 60g seems on the lower end. Your brain needs fat and since you're already vegetarian, you need the extra nutrients. Go into your diary settings and custom change them however you want.

Eat enough calories. Don't skimp. Eat much more good fats (oils, nuts, fatter cuts of meat, high quality butter) Eat less processed sugar. Get sugar from fruits and minimize other sources. That's where I would start if I were you.

I took a break to focus on medical treatment for a year, but only ended up being sicker than ever. Getting back to paleo makes me feel so much more functional and eating any other way just doesn't feel worth it.

Done it twice, once was AIP. It is definitely more for health, as is all Paleo... I have regained function of my body with it. I have been extremely ill for 20 yrs. Go for it... it's doable and filled with micronutrients that you need!

Give your adrenals a REST. Stop exercising so much. Eat a little more... add some good quality fats in.... focus on sleep... laugh every day. Get your body to relax more so your adrenals can breathe.

I wouldnt worry about fruit/natural sugar too much right now. Get the transition started and then you can see if you need to tweak your natural sugar intake later. Go easy on yourself while you make this big change.

You can eat some natural sugars, but you probably want to keep it at 1 serving a day or just really limit what you eat. Almond milk is delicious. I do not miss regular milk at all. It all takes a short period of adjustment but it is very doable.

You could log it and overestimate or you could take your best guess at how much you ate. I usually do this. If I know I've got 100g of apple and I eat most of it, about 80%, then I log 80g instead of 100.

Eating so little is awful, in my opinion. If your body thinks it's starving it will hold on to weight. Under eating and over exercising is so bad on the adrenals.
