It will definitely help you track your results, but just because you have a scale doesn't mean you need to use it every day. Why not once a week? You should weigh yourself at the same time of day each time you do step on, though.

Yeah the idea is that you don't want your body to go into starvation mode. If you're not taking enough in, especially if you're exercising, your body will start to hang on to its own fat (like hoarding it) for fear of being left without enough.
