Cauliflower pizza crust is really good. I remembered it later. Tonight I had "pasta" using spagetti squash which is my go-to quick dinner. It can also be topped with clams or pesto. Thinking about trying it as Mac and cheese too.

While at Red Mountain Spa, I learned to make mashed cauliflower as a replacement for mashed potatoes. Now, I also use it mashed to thicken chowders, and grate it and use it steamed as a replacement for rice, orzo or grits (top with a poached egg) as well. My husband actually prefers it now.
