I've heard it both ways. I usually don't eat much after 7 just because I normally have had dinner by then. I almost always have a casein shake before bed though. Your body is essentially fasting while you are sleep.

I prefer the mornings. I also incorporate a protein shake at a minimum after but also drink one before I go on occasions. It just makes me feel ready for the day.

Protein builds muscle. General rule is 1 to 1.5 grams of protein per pound body weight for maximum muscle growth. Bonus: Muscle burns fat!

The only way to get abs to show is to reduce body fat. And yes you more than likely will have to give up your surgery foods (actually certain about that).
