I like to fry up some veggies (especially eggplant and zuccini) in Olive Oil and Balsamic Vinegar. Then I toss them into the quinoa. I then throw in some crumbled Goats Cheese and voila! Delicious!

Beautiful post :) I don't have time to dedicate to exercise - I have two very small children - and I always feel so guilty! After reading this, I realize that biking with my kids, gardening with them, going to the park....it IS enough :)
