I also like to thinly cut (red) cabbage lengthwise so you have long strands of it, boil it with a bit of vinegar until soft, and then use that as my noodle alternative. I know people often hate on boiled cabbage, but I find it pretty filling and it pairs well with cider or wine vinegars.

I put them in already boiling water and let them boil for exactly 10 minutes (with the lid partially on the pot). I've never had an issue peeling mine, usually I just roll them over the counter to crack the whole shell and then the peel just flakes off when I add pressure.
