I have this same problem. Late afternoon is the only time that I can workout. I don't eat my 'extra" calories pre-emptively because of what you said .. miscalculations and/or missing the workout. I will usually eat a larger dinner (same thing as planned, just a little more of it) and a snack later in the evening.

My favorite of the week is a low-calorie tortilla spread with 1T creamy peanut butter with 1/2 banana smashed on top of that. Roll it up...wrap it up...ready to eat. Yum!

sauteed with onion & spinach ... then scrambled with a few egg whites .... then topped with a smidge of feta .... toss that into a tortilla and you have an amazing tasting and incredibly filling breakfast!

Ok...here's what I've got for this weekend. Friday: Meeting a colleague @ First Watch for breakfast. My normal calorie consumption in the a.m. (breakfast & morning snack) is roughly 450, so that's what I'm shooting for. They have some lunch bags that have small ice paks you can use. Also...a wide mouth thermos could be used for hot or cold items. I think you have options....you just need some new "tools!"

AWESOME job Becka and Beth! I will do this again for the coming weekend. Thankfully I have only ONE "danger" event this coming weekend...the rest will be pretty easy. AND? It's suppose to be in the 50s and (i think) sunny on Saturday...I see a trip to the Zoo in our very near future..you know, along with every other family…

How about buying a small soft cooler? That will open up your options a little bit...lettuce salads, pasta salads, grain salads, veggies/dip, hummus, tortilla roll ups. None of these things need to be heated up.

I made this last night. YUM! I used regular old chicken thighs with the skin removed (myself). Baked them at 450 (because I was also making roasted potatoes at that temp) for 25 minutes. @BossFan2 ... I've heard of this "green smoothie" phenomenon going on lately. I cannot fathom putting spinach in my fruit smoothie but I'm becoming curious enough that I may just have to give it a try. What a great way to get some xtra nutrients in!

This does so good. I have read that if you salt your eggplant after slicing it, and then lay that on paper towels for 30 minutes or so, it will wick out some of the extra moisture. I wonder if this might crisp up the outside more? How crispy was your eggplant?
