Fellow veggie hater. I've recently realized that I really like zuccini when I sautee it with lemon. Also, riced cauliflower. You can season it however you like.

I work a late evening desk job so this is tough for me, too! I've found the key for me is eating low cal snacks like Skinny Pop popcorn or dried seaweed.
