I don't log nibbles. Not doing so never interfered with my weight loss and hasn't prevented me from successfully maintaining that loss for almost two years. That said, my nibbles are infrequent and if I had had a problem losing I would have either eliminated the nibbles or logged them.

I was up about 5 pounds as of last Sunday, but 4 pounds were gone this morning, and I expect that last pound to be gone by this Sunday. I'm in maintenance, and already back below my goal weight. I ate anything I wanted to over the holidays, and enjoyed it. Back to my regular eating program now.

This ^^^. It sounds like you have symptoms of overtraining. Not all programs are suitable for everyone, and especially not while eating at a deficit. I like to keep track of how much time I spend exercising, so I still log it in MFP but change the calories burned to 1 calorie per session. That way, the exercise burn does not change my allotted calories in MFP (except for the one calorie, or two if I do a couple of sessions per day) and I can still track the time.

It varies, but most are not completely accurate. In most cases, there is a little more in the can/package than the label states. Usually not a huge difference, but I have had tuna weigh in excess of an ounce more than the net weight on the can.
