I eat 20 grams or less a day now that I started keto for health reasons. I won't say that would be the reason I lose weight if I do. I lost weight before my health issues started eating 150 to 200 g of carbs daily.

My first thought as well. If you already have a hard time getting protein in, then why would you increase your intake to 55%. That is a lot. How long have you been at a stand still?

Fat is good for you. I fry my chicken in a big pot of oil and then I toss it in butter, garlic and parmesan cheese yummm!! Not harming me at all. Roast it, pan fry it, bake it, broil it, grill it.....

Aren't you doing Whole 30 for health reasons? PCOS? Maybe it isn't what you need to do right now. Maybe find another low carb option with more food choices that you love. Maybe try taking baby steps with it instead of going in all at once. Remember why you are doing this!

I'm eating lasagna. I made a pasta free lasagna (low carb for health reasons) for my lunch this week. I just cut a piece and go. Casseroles are great for the week. Prep it Sunday.

No days off eating when eating what you love in moderation. A day off is when the weight is gone, a holiday or a birthday. Nah it's normal. By time the night comes and you weigh in you have had food, drinks and probably retaining water or bloated.

I just do not understand when people say they have a hard time eating 1200 calories. I have a hard time eating that cause it is too low for me. You need to have a better relationship with food.

Eat more fat, protein and fiber rich veggies and whole grains. Fat helps you to feel satiated. or maybe increase your calorie intake by a 100 and see if that helps.

Yeah....no. It is not necessary. You can eat whole foods and process foods and still be healthy. Eating the proper macro and micro nutrients is what makes you healthy. Unless you have a medical issue. Your lifestyle does not have to consist of only "clean" foods.
