Your best bet may be estimating how much oil is actually on the food. I don't eat fried foods, so I have not come across that.

If I do cardio intervals for 30 minutes, I can burn 350-430 calories, because I'm pushing myself very hard. It is important to change up your exercise, because your body will eventually adapt.

Rule number one: If you don't know what it is, then you shouldn't be eating it! As in, if you picked up some boxed/canned food off the shelf at the grocery store, and read the ingredients list, and don't know what you are eating, chances are your body has absolutely no use for it. Put it BACK!

weight.... so irritating. I've been going back and forth between 116 and 117 for the last 2 weeks, but my bf is between 13.5 and 14% so I really am not complaining. I only say this because you are probably just gaining muscle. I think that is what is happening to me!

If you can find dirt trails to run on, that is a lot softer on the knees. You will probably go slower on them, since footing can be uncertain, but running on a trail through the woods is so nice!
