Take it slow. Losing that much weight so fast is dangerous, and the likelihood that you'll gain it back is very high. Eat healthy and exercise and you will see results :)

I never count the sugar in fruit because I eat so much of it haha. I eat tons of fruit and it has never negatively affected me so I just go with that :)

Personally, I think you're doing it right! Breakfast should be your biggest meal and then each meal after that should be a little smaller. I eat huge breakfasts a lot too or else I'm hungry again in 2 hours haha

In my opinion, you should be eating at least 1500 calories every day, not allowing yourself to eat it once a week. With the amount of exercise you're planning on doing you need to make sure your body receives all the nutrients necessary in a healthy and successful weight loss.
