My only experience with eliminating wheat is the obnoxious guy in the office next door who towers over my desk every day to tell me how wheat is poison to the body and how eliminating wheat has not only cured him of asthma and other health issues, but also prevents him from getting sunburned.

I am dying to know how offering helpful solutions to help her cope with her addiction (which as you said I should know) is somehow erroneous compared to the "just get over it" advice.

So if talking to someone that way who is an addict is so beneficial, how did they become addicted and stay addicted for so long? Pretty sure they all had people talk to them like that without offering the tools to beat triggers and it must have worked wonders.

I think that part of the issue might be (correct me if I'm wrong OP) that she can't reach sobriety because of the ED. The drugs act as something that helps her lose the weight that, mentally, she feels she has to lose. It's like a double edged sword.

I don't think this is helpful. She has a lot ahead of her. Rationalization of her drug use having been clean for only a few months is decent progress. Addictions are time consuming. No one is ever cured from addiction. Recovery is a life-long process.

First, establish your triggers. The better you know them and understand them, the better you will be equipped to notice them when they happen. Make a list of them. I specialize in persons with substance abuse. My suggestion is to seek out a mental health counselor, a drug and alcohol counselor, and maybe attend some NA meetings. This is the only advice you should take at this point. I would not take any advice that does not direct you to counseling.
