Well fiber is counted as a carb so there's really no way if you're not willing to eat a few more. Try counting net carbs instead if you're not getting enough. I'm regularly over my carbs but under my net carbs, fiber is not something you should compromise on. In my opinion it's the most important non-macro you can track.

I usually use one part quinoa with one part protein and two parts vegetables. Broccoli and cauliflower go really well with quinoa's fluffy consistency. You can use it pretty much anywhere you'd use rice though.

Do you have any sources for the studies that found that soy is protective against cancer? I eat soy by the bucketful and constantly hear all sorts of nonsense about it. It sounds like something you'll have to figure out for yourself if your doctor couldn't give you a number. Try cutting back significantly then slowly reintroducing larger amounts until the issues come back to find your limit.

I'm vegan too and rarely struggle with protein. Fats are more of an issue in my experience but peanut butter and tofu round both of those out nicely. It might not provide quite the boost you're looking for but dumping chia and flaxseed into oats is a good way of getting more protein into a standard meal.

I'd assume it's water weight for now. If the loss stays consistent you'll know that it wasn't, but it'd be unusual if you didn't lose about that much water weight initially.

If this is your first week, a large amount of it is almost certainly water weight. If you ate at a deficit, though, some of it will be fat. You'll get a better idea of how much you'll be losing in the following weeks after the initial drop which is usually steep.
