That's fine. It's all about averages. It's acceptable to go over a few days as long as you go under a few days to balance it out. This doesn't mean completely starving yourself the next day, but instead of, say, 1600 calories each for 3 days afterwards, go about 1300.

Nothing much, although if you have water with a meal you're obviously not going to have a caloric beverage with your meal as well. Think of every glass of water as a glass of pop or juice that you aren't having. Your body will appreciate it.
