I did the hill hike again today and I am getting faster. Also trying out one new meal a week. The current try is Peruvian Chicken and is darn good.

Not as often as I like, or should. Last time was about a month ago. Just got lazy and stressed, so stopped. I like to hit it at least once a week, twice is better. Have to work on adding the pack when I get better. Awesome job on the running!

It is a 30 to 40 percent incline, so pretty steep. I went a bit over 1/2 way up and called it good for now. When I get good it takes about 45 minutes of steady hiking (no snow) to get to the top. The nice thing is that it is all on my property. Saw four Cow Elk too, and the dogs are much happier now.

Jennifer, to my knowledge it is normal. I know that it happens a lot less now than it used to, probably me just getting more used to the new "normal". What I have found is that if I don't watch it I go longer between eating, and that is also not the best thing to do.

Thought I would step in and check on everybody. Yep, I am still kicking around here. I am slowly getting more comfortable with all the life changes. Plus side is that I stuck to my food intake during the last 2 months, so my weight has basically stayed the same (huge for me).

Kris, I avoid restaurants at all costs (client meals excluded). For those I order salads. I can usually find a Boston Market (1/2 chicken and green beans). Many places have good salads. I am not sure when a Casserole becomes a Casserole, or really what really makes anything a Pizza? :smile: The idea actually came from a Chicken Pesto Pizza that we used to make with the Boboli?? or my homemade crust. I just deleted the pesto and the crust. So, is it still a Pizza? Or is it a Casserole now? :smile:

Sadly the one I have left does not have a lid. I love it anyway. Reminder if you have tile counter tops.. do not put hot Pyrex on them. They are cold and it will shatter. Just a tip :smile: I need to get some new ones.

You know TJ, I really messed up with posting that. That is what I get for assuming that everyone knows what I am saying :smile: The Spinach is fresh, and it cooks down; does not crisp up. Think Casserole style. It is a glass dish, Pyrex if I remember correctly.

I pre-cook the chicken, let it cool, then shred. Shredding gives it more bulk. While the tomato in slices is good, the Sun Dried really make the flavors pop. Gads, I darn near want to make a batch now.. :smile:

I have gone off track quite a few times. I was actually very happy that through all the stress and trials over the last 6 weeks I managed to keep it on track. Not a varied diet, but I did stay on. Will I ever go off track again... I am sure of it. I believe I have learned enough good habits to keep it to a minimum though.…
