Strength training is so different for everyone. If you have one, or can get one, try using a HRM to gauge your exertion. I've found that the calories for strength training exercises in MFP are much less than what my HRM reports. I just created a cardio exercise called "strength training" and log my calories with that.

I got a Taylor Lithium from Kohl's. I really like it and it seems to be pretty accurate. Taylor also makes a Biggest Loser version that shows body fat.

Oh! How exciting! I would snack on some mixed nuts or hummus and wheat thins (~200 cal for either option) and then eat a decent dinner with lots of lean protein. Lucky you!

Absolutely. I gain about 2-3 pounds for about 4 days. It's gross, but it does seem to go away pretty quickly. I do try to keep doing the right things, though (eating right, exercise, etc...). Cravings during that time are so hard. :-P~
