I would be a Monk. And to level up, you should take your ultimate goal and divide it into like four parts. Every time you reach 25% of your goal, you level up. And you could have four levels of each class. Like, for Monk you could have L1: Postulant, L2: Novice, L3: Priest, L4: Abbot. And you should be able to earn bonuses!
