The fact you said "when I log" suggests that you are not logging regularly. If you haven't been logging (let alone using a scale) up until now - you really have no idea how much you have been taking in. Start there - that with using a scale will be eye opening.

except you are not compulsively logging accurately because most of your entries are in "pieces" and "cups" - that is no way accurate. and regarding the muscle - cwolfman13 covered that well.

you are certainly not putting on muscle mass eating at a deficit and doing HIIT, jogging and yoga. as was said above, if you were losing fat and gaining muscle you would be fitting into those clothes better. much more likely to be a logging/intake issue.

not sure exactly what "tone my belly" means, but you can't spot reduce fat. if you are looking to lose fat you need a calorie deficit to lose overall.

are you weighing EVERYTHING you eat? at your weight if you were truly eating 1200 calories weight would be flying off. this is most likely a measurement error - tighten up your weighing/logging and you'll notice a difference.

you lose weight based on the calories you eat - not the time on the clock. so as long as you are eating at a deficit you will be fine (assuming weight loss is your goal).

you seem to be focusing more on things that don't matter (i.e. eating "clean", no bread or pasta) than what does (i.e. a calorie deficit). are you weighing all your food to ensure you are eating the amount you think you are??

you talk about eating "pretty healthy" and "vegan" - but these have nothing to do with weight loss. are you eating at a calorie deficit?

Love it - love having large meals and being full instead of little amounts throughout the day.

she is not putting on appreciable muscle mass while running and eating 1400 calories per day. muscle growth is a long and slow process - especially in females - and would require a progressive lifting program which she makes no mention of. much more likely to be a logging issue or any of the other issues noted above.
