Frozen vegetables are not cooked they are just flash frozen so to roast the just thaw them out and roast them according to your recipe.

You are correct I can't eat like this forever. I do not know how long I will eat like this. It could change at my next Doctor visit. I do have an eating plan for maintaining. I am not telling anyone else to eat a 1200 calorie diet. I can only speak of me. But I am tired of people talking on this forum like they are experts, when they are not.

I did consult a registered dietitian on referral from my Cardiologist. I do take supplemental vitamins. My calories are correct. They are calculated off my brands of bread, margarine and so forth.

You can use almost any veggie you want. Just adjust the size of the veggie in your dish. If a veggie has a tendency to become mushy when cooked, ( broccoli, cauliflower, squash for example) cut them larger than veggies that keep their crispness ( onions, carrots, fresh green beans).
